This is the famous “Bryan Chu” guacamole recipe. Make this and your guests will be standing over the dish shovelling nacho chips full of this green goodness into their mouths. Makes about 6 – 8 cups.

- Mash the avocados in a large bowl until mostly smooth.
- Half the lime and squeeze the juice into the bowl. Mix. The lime juice will prevent the "browning" of the avocados.
- Dice onion, add to bowl.
- Dice jalepeno, add to bowl.
- Quarter the tomatoes to facilitate the seed removal. Dice tomatoes and add to bowl.
- Dice some of the cilantro, add to bowl. The amount is based on your taste. I like about 1/4 cup.
- Dice garlic, add to bowl.
- Add cumin.
- Add salt and pepper to taste.
- Mix well and taste. Adjust salt and lime juice to get the perfect taste. Note: Keep on adding more lime juice. The lime juice makes the Guac "pop" and changes that "bland" taste.
