Chili

This is my favourite Chili recipe. It was handed down from Toni, it may have been adjusted a little over the years. Chili is a spicy stew. The name “chili con carne” is taken from Spanish, and means “peppers with meat.” Traditional versions are made, minimally, from chili peppers, garlic, onions, and cumin, along with chopped or ground beef. Beans and tomatoes are frequently included.

  • Cook ground beef in pan until browned, strain out fat, set aside. Do not clean the pan. If using crock pot then add to the crock pot now.
  • Add onions, celery, bell pepper, and garlic to the pan. Cook until soft and fragrant. You can transfer to crock pot at this time if using one.
  • Combine cooked meat, cooked vegetables and all other ingredients to a large pot (or your crock pot). Stove Top: Cook on low for about 1 hour (stir lots to prevent bottom from burning). It will thicken up and the beans will start to fall apart. If it gets too thick, water it down with beef broth. Crock Pot: Cook on high for 3 hours; stirring occasionally. It will thicken up and the beans will start to fall apart. If it gets too thick, water it down with beef broth.
  • Serve with a dab of sour cream and a squeeze of lime and top with some fresh chopped green onions.  The sour cream gives a great cool contrast against the spice and the lime gives an awesome zing.
  • Options:
  • optional substitutions: -one can of kidney beans with chick peas, -add corn if desired -Try adding 2 tsp of cocoa powder to give it a great flavour profile
