A pancake is a flat cake, often thin, and round, prepared from a starch-based batter that may also contain eggs, milk and butter, and cooked on a hot surface such as a griddle or frying pan, often in oil or butter.

- In bowl, with wire whisk, stir flour, sugar, baking powder, and salt. Mix well.
- Add milk, butter, and egg and stir until flour is moistened (try to smash up the butter into as small as clumps as you can).
- Heat griddle or 12-inch skillet over medium heat until drop of water sizzles. I like to use heavy duty cast iron pans, it is easy to over heat the pan which is easy to burn the non-stick coating of expensive pans.
- Brush lightly with oil or cooking spray. Pour batter by scant 1/4 cups onto hot griddle, making a few pancakes at a time. Cook until tops are bubbly, some bubbles burst, and edges look dry. With wide spatula, turn and cook until underside is golden. Transfer to platter; keep warm.
- Repeat with remaining batter, brushing griddle with more oil if necessary.
