Chicken Fried Rice
The staple of Chinese food (who doesn’t like Chicken Fried Rice), the Chicken Fried Rice.
Ingredients:
- 1 Cup of uncooked Jasmine Rice
- 2 Cups of water
- 1/4 tsp salt
- 1 chicken breast
- 1 small white onion (chopped)
- 1 rib of Celery (chopped into pea sized pieces)
- 1 large Carrots (chopped into pea sized pieces)
- 1 cup of frozen Peas
- 2 eggs
- 2-4 Tbsp Soy Sauce
- 2 Tbsp Chopped green onions (optional)
Directions:
- Add rice, water, and salt into a rice cooker (if you do not have a rice cooker; go get one); cook rice, set aside (this can be done ahead of time to save time).
- Cook and shred the chicken, set aside.
- Heat a large non stick pan or wok, add 4 tbsp of canola or sesame oil; add celery, carrots, and peas. Cook on Med-high heat until carrots are half cooked. Push everything to one side of the wok, break in eggs to empty side of wok and scramble, cook egg fully. Add pre-cooked rice and mix everything together, add soy sauce and add chopped green onions if desired, mix everything well and fry for a few minutes (this will dry out the rice a little).
- Serve with your favourite Chinese main course (Ginger beef, sesame chicken, etc).
